Where I've been...
We close on Friday and I can hardly wait to get started with decorating and renovating! The house is a 1920s bungalow about 2 streets over from our current rental house. We love the area and the house has so much potential! The house is in great shape, but needs some cosmetic changes. I'll be sure to update the blog with before and afters, of course. The BEST Pumpkin Bread Recipe
Pumpkin Bread
- 1 cup pumpkin
- 1/2 cup vegetable oil
- 1 1/3 cup white sugar
- 2 eggs
- 1 1/2 cups and 1 Tablespoon all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup chopped walnuts
Pre-head over to 350 degrees. Grease bread pan. In a large bowl, mix together pumpkin, oil, sugar, and eggs. Stir until well-blended. Add flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Beat until smooth. Stir in walnuts. Bake for 45 minutes to 1 hour. Enjoy!

Nutty Pumpkin Muffins
I thought I'd share this delicious recipe with you all. My mom visited me 2 weeks ago and I made these for a breakfast treat. They were super easy to make and we both loved them! They're traditional pumpkin muffins, but with some nuts added (which makes everything better in my opinion).
In a large bowl mix eggs, sugar, pumpkin, oil, and water. Combine flour, cinnamon, baking soda, baking powder, and salt. Stir into pumpkin mixture; mix well. Fold in nuts. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350 degrees for 20-25 minutes or until muffins are done. Cool on wire rack. Enjoy!
